When to adjust

The ratio is a starting point for a beer-and-wine bar or a short list of simple mixed drinks. Pour speed is what limits a bar: a bartender opening beer and pouring wine serves far more people per minute than one shaking cocktails.
- Add a bartender for a signature cocktail menu, a full open bar with shaken drinks, a single bar serving more than about 150 people, or a cocktail hour where everyone arrives at once.
- Add a barback (someone who restocks ice, glasses and bottles) for events over about 200 guests, so bartenders never leave the bar.
- You can run lean with a beer-and-wine bar, a second self-serve station for water and soft drinks, or passed drinks during cocktail hour.
Two bars at opposite ends of the room move a line faster than one bar with the same number of staff.
