What to ask.

Mandatory programs differ in who they cover: some apply to every server, others only to managers or to new licensees. Voluntary programs reward training with incentives such as a defense in liability cases or lighter penalties; each state page lists which ones apply. Minimum ages also vary: in 28 of the 49 states with data, someone under 21 may bartend or serve, often only with a manager present.

Ask any bar service for proof that its bartenders are certified where your state requires it, and when the certificates expire. Training covers checking IDs, spotting intoxication and refusing service. Those are the same points that decide liability if a guest causes harm after drinking.
